This course is designed for students who have an excellent general knowledge of the practical aspects of catering or bakery industry and who wish to specialise in either professional kitchen and larder work, or desserts, pastry, dough and pastry products. The course also has an introduction to sugar boiling and chocolate work for those following the patisserie route.
